Zucchini Mushroom Bread Pudding

Ingredients

  • 6 cups bread stale
  • 350 grams zucchini diced
  • 400 grams mushrooms sliced
  • 1/2 bunch fresh parsley chopped
  • 200 mililiters buttermilk
  • 2 large eggs
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 1/2 teaspoon black pepper

Directions

Preheat oven to 175°C (350°F)
1) Cube the bread.
2) Combine milk, eggs and salt in a bowl. Mix thoroughly.
3) Soak bread in milk and egg mixture until absorbed.
4) Saute zucchini and mushrooms until lightly brown. Add thyme and saute an additional two minutes. Add to bread. Add spices. Combine. Add water or vegetable stock until moistened.
5) Pour mixture into pan or casserole dish. Bake for 25-30 minutes until pudding is set.
