Ingredients
- 150 grams leeks
- 25 grams garlic
- 1 whole star anise
- 200 grams onions
- 20 mililiters oil
- 5 grams hot sauce
- 1 kilogram pumpkin cubed
- 1.6 liters crushed tomatoes
- 250 grams tomato paste
- 20 grams salt
- 1/2 teaspoon smoked garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
Directions
- Saute leeks, onions, star anise and garlic in oil until translucent.
- Add hot sauce, pumpkins, crushed tomatoes, tomato paste and spices. Stir until combined. Cook on low for 20 minutes.
- Add 2.4 liters of water. Cook for one hour.
- Remove star anise. Use an immersion blender to puree the soup.
You can substitute chipotle hot sauce and omit the smoked garlic.
