Pumpkin Ketchup

Ingredients

  • 1 1/4 liters pumpkin puree
  • 100 grams onion
  • 2 whole garlic cloves
  • 1/3 cup apple cider vinegar
  • 2 tablespoons agave nectar
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon cayenne pepper

Directions

  1. Combine all of the ingredients in a medium saucepan and bring to a boil.
  2. Lower heat and simmer for 20 minutes.
  3. Cool. Use a food processor or immersion blender to puree until smooth.
