Ingredients
- 1 whole eggplant cubed
- 2 large onions sliced
- 2 whole red peppers cubed
- 200 grams cherry tomatoes
- 3 clove garlic crushed
- 4 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon oregano
- 1/4 teaspoon black pepper
Directions
1) Preheat oven to 200°C (400°F).
2) Coat cut vegetables in oil and seasonings.
2) Spread vegetables in roasting pan. Roast in the oven 25-30 minutes. Turn vegetables twice during cooking.
