This is a fun and easy recipe to do with the kids, and a good introduction into the use of gelatin.

- 28 grams unflavored gelatin granules
- 1 1/3 cups ice water
- 454 grams sugar (16oz)
- 1 1/3 cups corn syrup light
- 1/4 teaspoon salt
- 1 1/2 teaspoons vanilla
for dusting
- 1/3 cup confectioner's sugar
- 1/3 cup cornstarch
Directions
- Place 3/4c. water in the mixer bowl. Add gelatin granules and let sit. Connect whip attachment to mixer.
- Combine remaining water, granulated sugar, corn syrup and salt in a small saucepan. Cook covered over medium-high heat for 5 minutes. Uncover and cook until a candy or infrared thermometer registers 115°C (240°F). Remove from heat.
- Turn the mixer on low. Add the sugar mixture to the gelatin and water in a thin, slow stream.
- Once the sugar is incorporated into the mixer, set the mixer on high and mix for 15 minutes, until mixture is lukewarm.
- While the marshmallows are mixing, combine the confectioner’s sugar and cornstarch in a bag and mix well to use as a dusting powder.
- Add the vanilla and mix for 1 more minute.
- Spray a pan with non-stick spray and lightly coat with sugar dusting powder. Reserve the remainder of the dusting powder.
- Pour the mixture into the pan and smooth with a lightly oiled spatula or fingers. Allow to set for four hours or overnight.
- Turn out the marshmallow and cut into cubes. Dip the cubes into the dusting powder.
- Store in an airtight container for up to three weeks.
- Fill a container with water and ice and let it sit for five minutes. Then measure the ice water out into a measuring cup.
- The size of the pan will determine the height of the marshmallows.
- Pipe the mixture into thin ropes and cut into segments for mini marshmallows.
- Use flavorings other than vanilla to make different flavored marshmallows.
- Add food coloring for different colored marshmallows.
- Coat marshmallows in melted chocolate.
