Duck Breast with Lime & Agave

  • 1 whole duck breast per person
  • 1 whole lime juiced
  • 2 teaspoons agave nectar
  • 1/4 cup olive oil
  • 1 tablespoon tequila
  • pinch salt


  1. Marinate duck breast in remaining ingredients overnight.
  2. Sear duck skin side down until the skin is a deep caramel color. Drain off the fat from the pan periodically.
  3. Flip and cook duck until medium rare, 6-10 minutes depending on heat and thickness of duck.
