Bolognese Sauce

Cut the vegetables into brunoise dice. You can substitute tomato juice for beef stock.

Ingredients

  • 300 grams meat ground
  • 150 grams smoked deli fine dice
  • 50 grams carrots fine dice
  • 50 grams celery fine dice
  • 50 grams onion fine dice
  • 60 grams tomato paste
  • 1/4 cup red wine dry
  • 1/2 cup chicken stock
  • pinch nutmeg
  • pinch salt
  • pinch black pepper

Directions

1) Brown meat and deli for five minutes in a large frying pan.
2) Add carrots, celery, onions, tomato paste and red wine. Reduce heat and simmer 10 minutes.
3) Moisten with stock, season with nutmeg, salt and pepper.
