Cut the vegetables into brunoise dice. You can substitute tomato juice for beef stock.

Ingredients
- 300 grams meat ground
- 150 grams smoked deli fine dice
- 50 grams carrots fine dice
- 50 grams celery fine dice
- 50 grams onion fine dice
- 60 grams tomato paste
- 1/4 cup red wine dry
- 1/2 cup chicken stock
- pinch nutmeg
- pinch salt
- pinch black pepper
Directions
1) Brown meat and deli for five minutes in a large frying pan.
2) Add carrots, celery, onions, tomato paste and red wine. Reduce heat and simmer 10 minutes.
3) Moisten with stock, season with nutmeg, salt and pepper.
