The Marinade

Because it typically lacks an outer layer of fat, an oil-based marinade is the best choice for a London broil. Don’t use extra-virgin olive oil, since its delicate nature may render the meat a little bitter; regular olive oil or vegetable oil is fine. Peanut oil is a good choice, since it can stand up to higher temperatures. Soy sauce is a good ingredient for marinating, since it helps soften the meat, adds a nice color to the meat, and gives it a saltiness.

Ingredients

  • 240 mililiters olive oil
  • 60 mililiters soy sauce
  • 3 tablespoons mustard
  • 100 mililiters balsamic vinegar
  • 120 mililiters lemon juice
  • 2 teaspoons dry sage crushed
  • 2 teaspoons garlic minced
  • 50 grams brown sugar

Directions

  1. Combine all ingredients in a bowl and whisk to blend.
  2. Pour over meat.
  3. Cover meat and let marinade 1-4 hours. Reposition meat every hour.
