The Marinade

Don’t use extra-virgin olive oil, since its delicate nature may render the meat a little bitter; regular olive oil or vegetable oil is fine. Peanut oil is a good choice, since it can stand up to higher temperatures. Soy sauce is a good ingredient for marinating, since it helps soften the meat, adds a nice color to the meat, and gives it a saltiness.

Ingredients
- 240 mililiters olive oil
- 60 mililiters soy sauce
- 3 tablespoons mustard
- 100 mililiters balsamic vinegar
- 120 mililiters lemon juice
- 2 teaspoons dry sage crushed
- 2 teaspoons garlic minced
- 50 grams brown sugar
Directions
- Combine all ingredients in a bowl and whisk to blend.
- Pour over meat.
- Cover meat and let marinade 1-4 hours. Reposition meat every hour.
