Spice Rubs

Grilling and summer are inseparable. It’s a quintessential summer activity, it takes the heat of cooking out of the house, and in Israel, the chances of it raining on you are practically nil.

And the smell of it drives your neighbors crazy. Right, guys?

Dry spice rubs are for meats and fish that are fatty enough not to dry out on the grill. You can mix it into your chopped meat to give your burgers and extra or even season grilled vegetables with it. For anything that doesn’t have it’s own  moisture, a chicken breast for instance, pour oil into a bowl, add enough spice mix to make a thin paste, and brush it on.

This simple spice blend can go on grilled meat, chicken or vegetables to give it a flavorful kick.

Servings

Ingredients

  • 50 grams paprika
  • 30 grams garlic powder
  • 5 grams salt kosher
  • 3 grams black pepper
  • 1 gram cayenne pepper

Directions

Mix all of the ingredients in a jar. Sprinkle on grilled meats or vegetables.

A sweet and salty spice mixture that packs a fair amount of heat. Best on grilled meats.

Ingredients

  • 16 grams allspice ground
  • 196 grams salt
  • 90 grams black pepper
  • 70 grams sugar
  • 8 grams chili powder
  • 5 grams cloves ground
  • 21 grams dried thyme
  • 23 grams black pepper ground
  • 46 grams cayenne pepper
  • 13 grams cinnamon ground

Directions

  1. Combine all ingredients in an airtight container.
  2. To use, sprinkle and rub into meat. Allow to marinate for at least one hour.

  • 20 grams granulated sugar
  • 13 grams cocoa powder
  • 9 grams black pepper finely ground
  • 8 grams oregano dry
  • 15 grams dark brown sugar
  • 7 grams cumin
  • 10 grams kosher salt

Directions

  1. Combine all ingredients in an airtight container and shake to mix well.
  2. Store for up to three months.

  • 1/3 cup kosher salt
  • 1/4 cup chili powder
  • 1/4 cup Hungarian paprika
  • 1 tablespoon onion powder
  • 1 tablespoon black pepper coarsely ground
  • 1 tablespoon basil dried
  • 1 tablespoon oregano dried
  • 1 tablespoon coriander seed ground
  • 1/2 tablespoon cayenne pepper
  • 2 teaspoons thyme dried
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon cumin

Directions

Combine ingredients.
Store in an airtight container.

  • 7 corriander seed
  • 6 kosher salt
  • 6 turmeric
  • 5 cardamom
  • 4 cumin
  • 3 cinnamon
  • 2 garam masala (optional)

Directions

  1. Combine ingredients in an airtight container and share to combine well.
  2. Store for up to three months.
