Spicy Tomato Pumpkin Soup

Ingredients

  • 150 grams leeks
  • 25 grams garlic
  • 1 whole star anise
  • 200 grams onions
  • 20 mililiters oil
  • 5 grams hot sauce
  • 1 kilogram pumpkin cubed
  • 1.6 liters crushed tomatoes
  • 250 grams tomato paste
  • 20 grams salt
  • 1/2 teaspoon smoked garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper

Directions

  1. Saute leeks, onions, star anise and garlic in oil until translucent.
  2. Add hot sauce, pumpkins, crushed tomatoes, tomato paste and spices. Stir until combined. Cook on low for 20 minutes.
  3. Add 2.4 liters of water. Cook for one hour.
  4. Remove star anise. Use an immersion blender to puree the soup.

You can substitute chipotle hot sauce and omit the smoked garlic.
