Lamb Stew

Ingredients

  • 1-2 kilogram lamb meat
  • 3 tablespoons olive oil
  • 350 grams onions diced
  • 350 grams carrots diced
  • 350 grams potatoes cubed
  • 300 grams fennel sliced
  • 500 mililiters red wine
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 3 whole bay leaves

Directions

  1. Cut the lamb meat into small cubes.
  2. Heat olive oil in a deep pot.
  3. When the oil shimmers, add lamb bones and/or meat.
  4. Brown lamb over high heat for 5-10 minutes.
  5. Add onions, carrots, potatoes and fennel.
  6. Pour in wine, add seasonings.
  7. Cover, reduce heat to low. Cook for 90 minutes.
