Ingredients
- 1-2 kilogram lamb meat
- 3 tablespoons olive oil
- 350 grams onions diced
- 350 grams carrots diced
- 350 grams potatoes cubed
- 300 grams fennel sliced
- 500 mililiters red wine
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 3 whole bay leaves
Directions
- Cut the lamb meat into small cubes.
- Heat olive oil in a deep pot.
- When the oil shimmers, add lamb bones and/or meat.
- Brown lamb over high heat for 5-10 minutes.
- Add onions, carrots, potatoes and fennel.
- Pour in wine, add seasonings.
- Cover, reduce heat to low. Cook for 90 minutes.
