Ingredients

  • 800 grams crushed tomatoes
  • 100 grams onion minced
  • 100 grams green pepper minced
  • 50 grams hot pepper
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1/4 bunch cilantro coarsely chopped
  • 2 teaspoons lemon juice

Directions

1) Drain the tomatoes. Reserve liquid for flavoring other uses.
2) Add the minced vegetables, seasonings, cilantro and lemon juice. Stir to combine.

A medium heat cooked salsa with the three vegetables that are essential to Cajun and Creole cooking.

  • 2 tablespoons vegetable oil
  • 200 grams celery diced
  • 200 grams green bell pepper diced
  • 200 grams onion diced
  • 400 grams cubed tomatoes
  • 1/2 tablespoon hot sauce
  • 20 grams cilantro

Directions

  1. In a medium saute pan over medium heat, add oil and onion. Cook for 5 minutes until onion begins to soften.
  2. Add celery and cook for 3 minutes.
  3. Add pepper and cook for 3 minutes.
  4. Remove pan from fire. Transfer vegetables to a heatproof bowl.
  5. Add tomatoes, hot sauce and cilantro to vegetables. Stir to combine.
  6. Refrigerate for at least 1 hour. Serve at room temperature.
You can substitute ground turkey or beef stew for the ground beef. You can substitute canned tomatoes for fresh. Peel and seed the tomatoes. you can substitute any flavorful liquid for the stock, beef stock or tomato juice work well. Use canned beans if you like beans soft, or soak dried beans for eight hours for a firmer textured bean.

Ingredients

  • 1/2 cup oil divided
  • 500 grams onions diced
  • 500 grams ground beef
  • 800 grams tomatoes chopped
  • 2 liters chicken stock
  • 300 grams red beans canned
  • 500 grams green pepper diced
  • 100 grams hot pepper minced
  • 2 whole bay leaf
  • 2 tablespoons chili powder

Directions

1) In a 4-quart pot, heat 1/4 cup oil. Add minced garlic and cook until garlic lightly browns. 2) Add onions and sweat for 10 minutes until golden. 3) Add meat, 1/4 cup oil and stir. Saute on low for 20 minutes. 4) Add tomatoes to pot. Stir to combine. 5) Add stock, beans, chopped green pepper and hot pepper. 6) Add chili powder. Stir to combine thoroughly. 7) Lower heat and simmer for one hour.

Ingredients

  • 1-2 large onions
  • 1 1/2 cups flour
  • 1/2 cup cornstarch
  • 1 tablespoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon black pepper
  • 330 mililiters beer

Directions

1) Preheat oil to 175°C (350°F)
2) Slice onion into 1/2" rounds
3) Separate larger outer rings
4) Combine flour, cornstarch, seasonings and beer and mix well.
5) Dip onion ring into batter. Drop onion ring into oil. The onion ring should float to the surface of the oil in 5 seconds.
6) Fry until golden and bubbles surrounding onion ring slow.
7) Remove from oil. Drain. Serve immediately.

  1. bs'd Stupid question of the day. Do you have to use chicken wings for chicken wings. My family loves the concept,but complains about the effort compared to the result ratio. Would breasts with the skin or drumsticks or even pargiot work? Also, what is pargiot in English? Thank you for these recipes & the podcast. Just BTW, I finished in first place in the playoff fantasy football :) Yay Me.
